Any recommendations for paddle sailing in Wisconsin? Or lake resorts in WI.

My brother in law paddled there in a tandem on a guided trip for $99 each. They had to use provided kayaks. Will we be abke to launch from Bayfield by ourselves unguided as long as the weather is safe?
I have hwsrd Supieor makes its own weather and can change quickly. We paddled on lake Michigan in 3-4 ft waves and had a grest time. The weather went from beautiful sunny 80 to low 70s and heavy clouds and wind. We were out for 4 hours and did some down wind sailing with our WindPaddle. I'm looking forward to our folding MK 2 and Kayaksailor this spring.
